No-Rice, Fried Rice

1 head of cauliflower- riced in a blender or food processor (well, there’s no traditional rice!)
2 tablespoons olive oil
1 Tablespoon sesame seed oil
2 grilled boneless chicken thighs, diced into bite-sized pieces or ½ pound grilled shrimp
3 green onions – chopped
3 cloves of garlic, minced
2-3 eggs, beaten
2-4 tablespoons of coconut aminos, miso tamari , or soy sauce
1 tablespoon fresh minced ginger
1 carrot – chopped
8-10 roasted asparagus – cut in thirds
½ cup frozen peas
salt and pepper

Add oil to a sauté pan on medium-high heat. When pan is hot add garlic and ginger and cook for 1 minute. Add green onions, carrot, and cauliflower and mix to combine. Make a well in the middle of the pan, add the beaten eggs. Stir the egg only for a minutes so they start to firm up, then mix them into the rest of the ingredients. Add coconut aminos, cooked chicken or shrimp, and peas. Salt and pepper to taste, Cook a few minutes more to blend all the flavors.
